Apple Pancakes
12 inch Baked Pancake
3 eggs, room temperature
½ cup of milk
½ cup all purpose flour
½ teaspoon salt
2 Tablespoons of butter, melted, and
cooled
2 Tablespoons cinnamon
2 apples peeled, cored and chopped
(relatively small pieces)
Heat
oven to 450 degrees.
Butter a 12 inch
iron skillet (you can use a similarly sized pan)
Measure the flour
and salt unto a wax sheet of paper.
Beat the eggs
with a whisk until thoroughly mixed, add the milk. Add the flour salt mixture
to the eggs and milk whisk. Add the cooled, melted, butter. Add the cinnamon
and apples. Bake the pancake for 25 minutes or until the pancake has risen and
browned. Serve hot as the pancake is somewhat akin to a soufflé and will drop
as it cools. We usually have maple syrup, apple butter or orange marmalade
available to top the pancake with.
