1/8 tsp ginger
1 tsp crushed red pepper
1/4 tsp. curry powder
1/4 tsp black pepper
1/2 tsp ground allspice
1/8 tsp dried thyme
1/8 tsp cayenne
Blend together, set aside.
1 1/2 cup of rice
1 large sweet potato
1 apple (hmm so many varieties to choose from)
3/4 pound of lean pork cut into bite-sized pieces
1/3 cup of juice (apple, pomegranate, or cherry)
Oil for cooking
Prepare rice according to manufactures directions.
Peel sweet potato, cut into bite –sized pieces microwave until tender(3 minutes).
Cut up apple (bite-sized pieces), set aside.
Roll pork in seasoning mix. Place small amount of oil in frying pan. Fry pork for 2 minutes, add apple fry a minute more, add sweet potato and juice. Bring mixture to a boil, reduce heat simmer two minutes.
Place meat mixture over rice.
