Apple Oatmeal (Sherry’s Recipe)

4 cups of water

1 cup of Steel Cut Oats

Apples, cranberries, peaches, (dried or canned) and pecans

 

Bring 4 cups of water to a boil

(I usually put some cinnamon in the water, and often I will use apple juice instead of water).

Stir in 1 cup of steel cut oats.

After about 5 minutes oats will begin to thicken (reduce heat).

Depending on what type (dried or canned) of apples/peaches/cranberries you might add them at this time. I would add the dried fruit now and leave off the canned fruit for 15 minutes.

Simmer uncovered for 25 minutes, (a little more/ less) stirring occasionally.

·         Sometimes I cover the oats, if you do remember they will boil over easily!

The correct consistency of oatmeal is subjective. I find 20-25 minutes to be my preference. I usually add a dab of milk, and serve the oatmeal with cinnamon (more), honey, and pecans over the top.

Steel cut oatmeal’s taste and texture are truly different from regular oatmeal.

My method of adding pecan bits make it even more of a texture difference.

 

Often, because I work, and am in a hurry in the morning, I will double the serving size and

pack the oatmeal in a glass jar, which can be easily identified on the wild foray out of the door in the morning.
